All tacos all the time! This morning’s breakfast tacos were piled high with red potatoes sauted with bacon & shallots, mexican chicken, avocado, and an over-easy egg. They were a savory breakfast lover’s dream come true!
Recently, we created a fabulous new taco recipe here at The Gibson Estate: Black bean chicken tacos w/ onion jam, a tiny bit of monterrey jack cheese, avocado, and chipotle yogurt crema topped with fresh cilantro.

Everyone loves parfaits. Layers of vanilla and raspberry yogurt w/ frozen homegrown raspberries and oats. Always eaten with a silver spoon.
